gotta remember that xG in a small sample could amount to a few set of shifts where one team rifles a few on goal. One or two bad shifts by a team could skew that hard.

another thing is to include game score per period, as teams will almost always alter their style based on score and time.

this isn't to say the sabres deserve better than what their xG says, and it doesn't really matter.
